Beer Battered Crappie Fillets

 

2 lb cleaned crappie fillets

2 qt vegetable oil for frying

1 cup all purpose flour

2 Tbsp granulated garlic

2 Tbsp paprika

2 tsp kosher salt

2 tsp black pepper

1 bottle Duck Pond from Jack Pine Beer

1 egg beaten

Heat the oil in deep fryer to 350 degrees. Season crappie fillets with salt and pepper. Dredge fillets in flour to coat both sides and set aside. Sift flour, garlic, paprika, salt and pepper together then stir in beaten egg. Pour beer into mixture while stirring until desired thickness is achieved. For a thinner batter, use the whole bottle of beer. Dip floured fish into batter and drop carefully into hot oil. Fry fish until lightly browned and drain on paper towels.

 

Sriracha Tartar Sauce

1 ½ cups mayonnaise

¼ cup Sriracha

1 medium dill pickle spear chopped

1 Tbsp lemon juice

¼ tsp Worchester sauce
